Hill Your Potatoes for a Healthy Harvest.

Growing your own potatoes? When the plants reach about 8 inches tall, you’ll want to “hill” them — hoe several inches of soil or compost around the stems. This keeps the tubers buried well (if potatoes develop when exposed to sunlight, they turn green and bitter.) Hilling is not only protective, but experts note that it can also help increase yield, warm up the soil around the tubers, and improve drainage.
